- Cut cabbage & put in clean glass jar.
- Add to it, either boiled or dechlorinated & filtered water. Water should be at room temp. (leave water at counter to dechlorinate)
- Add rock salt or any non-iodized salt. (iodized salt hinders beneficial bacterial growth)
- Add some whole spices like fennel, cinnamon, black pepper whole.
- Close lid but not air tight.
- Leave it at counter for 8-10 hrs or overnight.
- Put in fridge & enjoy with meals.
