Fermented cabbage salad

  • Cut cabbage & put in clean glass jar.
  • Add to it, either boiled or dechlorinated & filtered water. Water should be at room temp. (leave water at counter to dechlorinate)
  • Add rock salt or any non-iodized salt. (iodized salt hinders beneficial bacterial growth)
  • Add some whole spices like fennel, cinnamon, black pepper whole.
  • Close lid but not air tight.
  • Leave it at counter for 8-10 hrs or overnight.
  • Put in fridge & enjoy with meals.
